Fruit, Yogurt and Granola Popsicles

These Fruit Yogurt and Granola Popsicles are a colorful, refreshing, and perfect for warm weather snacks or a healthier dessert!

Ingredients

Yogurt Layer

  • 2 cups Greek yogurt or regular yogurt
  • 2-3 tbsp honey or maple syrup
  • 1 tsp vanilla extract

Fruit Layer

  • 1 ½ cups fresh fruit or frozen fruit, thawed strawberries, blueberries, raspberries, peaches, mango, or mixed berries
  • 2 tsp honey or maple syrup optional, sweeten as needed
  • 1 tbsp lemon juice optional, for brightness

Granola Topping

  • 1/2 cup granola

Instructions

  • In a medium bowl, stir together yogurt, honey or maple syrup, and vanilla extract until smooth. Taste and adjust sweetness if needed.
  • For a chunky fruit layer, finely chop fresh fruit.
    For a smooth fruit layer, blend fruit with honey and lemon juice until it becomes a puree. You can also lightly mash berries with a fork for a textured swirl.
  • Spoon a small amount of yogurt into each popsicle mold. Add a layer of fruit or fruit puree.
    Continue alternating yogurt and fruit until the molds are almost full. If desired, use a skewer or butter knife to gently swirl the layers.
  • Sprinkle granola into the top of each popsicle mold. Gently press it into the yogurt so it sticks after freezing. Insert popsicle sticks and freeze for at least 4–6 hours, or until completely solid.
  • Run the outside of the popsicle mold under warm water for a few seconds to release the popsicles. Serve immediately.
