This Easy Weeknight Dirty Rice has all the savory, comforting flavor of classic dirty rice but comes together with simple ingredients that are easy to find and kid-friendly enough for busy weeknights.
Heat olive oil in a large skillet over medium-high heat. Add the ground meat and cook for 5–7 minutes, breaking it apart with a wooden spoon, until browned and cooked through.Drain excess grease if needed.
Add diced onion and carrots to the skillet. Cook for 4–5 minutes, until the onion softens and the carrots begin to become tender.Stir in garlic, Cajun seasoning, smoked paprika, thyme, salt, and black pepper. Cook for 30 seconds, just until fragrant.
Add the cooked rice, corn, peas, broth, and Worcestershire sauce to the skillet.Stir everything together until well combined.
Cook for 4–6 minutes, stirring occasionally, until the rice is hot, the vegetables are tender, and most of the liquid has absorbed.Taste and add more salt, Cajun seasoning, or hot sauce as desired.
Top with sliced green onions and fresh parsley and serve warm.
