  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar for 2–3 minutes, or until light and fluffy.
  • Add the egg, vanilla extract, and almond extract, if using. Beat until smooth and well combined.
  • Add the dry ingredients to the wet ingredients and mix on low speed just until a soft dough forms.
  • Cover the dough and refrigerate for 30 minutes. Chilling helps keep the cookies from spreading too much.
  • Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  • Place the sprinkles in a shallow bowl.
  • Scoop about 1 1/2 tablespoons of dough and roll it into a ball.
  • Roll each dough ball generously in the sprinkles, gently pressing so they stick to the outside.
  • Place the cookies about 2 inches apart on the prepared baking sheets.
  • Bake for 9–11 minutes, or until the edges are just set and the centers still look slightly soft.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
  • Cool completely before storing.
