  • Preheat oven to 425°F. Line a baking sheet with parchment paper. For extra crispiness, place a wire rack on top.
  • Set up breading session. To three shallow bowls, add:
    Flour lightly seasoned with salt and pepper
    Beaten eggs mixed with 1 teaspoon water
    Breadcrumbs, parmesan, garlic powder, salt, and pepper
  • Pat asparagus dry. Dredge each spear in flour (shake off excess), dip into egg mixture, then press firmly into the panko mixture to fully coat.
  • Place asparagus in a single layer on the rack or baking sheet with space between each spear. Lightly spray tops with olive oil or cooking spray.
  • Bake on the middle rack for 7 minutes. Move to the lower rack and bake another 5–8 minutes until golden and crispy. Rotate the pan midway for even browning.
  • Let cool for about 2 minutes before serving. Top with a squeeze of lemon or lime juice if desired. Serve with ranch, garlic aioli, honey mustard, or a yogurt-based dip.
