Chicken and Snow Pea Skewers
1.5lbsboneless chicken, sliced into 1-inch stripsbreast or thigh
Slice the chicken into 1-inch strips. In a bowl, whisk together soy sauce, brown sugar (or honey), mirin, rice vinegar, sesame oil, garlic, ginger, and cornstarch. Add chicken and toss to coat. Refrigerate for 15–30 minutes, or overnight for deeper flavor.
Trim the snow peas. Thread 2–3 pieces of chicken alternated with 1–2 snow peas onto each skewer. Reserve some marinade for basting during cooking.
Preheat grill to medium-high heat (about 400°F) and lightly oil the grates to prevent sticking.
Place skewers on the grill and cook 4–5 minutes per side, turning once. Baste with reserved marinade once while cooking.Total grilling time should be 10–12 minutes, until chicken reaches 165°F internal temperature and snow peas are slightly blistered and charred
