Ingredients

  • 1 loaf crusty bread sourdough or Vienna works best
  • 1 cup shredded mozzarella cheese or other good melting cheese
  • 1 stick butter softened
  • 2 large garlic cloves minced
  • 1/2 tsp kosher salt
  • 1 tbsp fresh parsley minced

Instructions

  • Preheat the oven to 350 degrees. In a heatproof bowl, combine butter, garlic, and salt. Microwave until melted, then stir in parsley.
  • Using a sharp knife, cut the bread on a diagonal into 1-inch diamonds, being careful not to cut all the way through.
  • Gently pry open each cut and drizzle in about 1 tsp of the garlic butter, then tuck in some of the cheese.
  • Brush the outside of the loaf with the remaining butter, letting it drip into the cracks.
  • Cover the loaf loosely in foil and bake for 20 minutes. Remove the foil and bake another 5-10 minutes, or until the top is golden and the cheese is melted and gooey. Serve immediately while warm and melty.
