Caprese Grilled Cheese Sandwich

Ingredients

  • 8 slices bread sourdough, ciabatta, or your favorite
  • 8-10 oz fresh mozzarella cheese sliced
  • 1 large tomato sliced
  • fresh basil thinly sliced
  • 4 tbsp balsamic glaze optional
  • 4 tbsp butter softened

Instructions

  • Lightly butter each slice of bread. On 4 of the slices, add a layer of cheese, sliced tomato, basil, and a drizzle of balsamic glaze to the unbuttered side. Top with another slice of bread, buttered side out.
  • Heat a large skillet over medium. Place the sandwiches on the skillet and cook for 3-4 minutes per side, until the bread is golden brown and the cheese is melted.
  • Remove from skillet, slice, and serve warm. Add an extra drizzle of balsamic glaze if desired. Enjoy!

Notes

  • Use fresh mozzarella for the best melt and flavor.
  • Pat tomatoes dry to prevent soggy bread.
  • Cook on medium heat to melt cheese without burning bread.
