Instructions
Preheat oven to
350°F
and lightly grease a baking dish with nonstick spray.
Add everything except the blueberries to a high powered blender. Blend until smooth and fully combined.
Pour the batter into the prepared baking dish. Sprinkle blueberries evenly over the top. (Using frozen blueberries helps prevent sinking.)
Bake for 45–50 minutes or until the top is golden brown, the bake is puffed up, and the center feels firm to the touch.
Let cool for at least 10 minutes before slicing and serving.
