  • Preheat oven to 350°F and lightly grease a baking dish with nonstick spray.
  • Add everything except the blueberries to a high powered blender. Blend until smooth and fully combined.
  • Pour the batter into the prepared baking dish. Sprinkle blueberries evenly over the top. (Using frozen blueberries helps prevent sinking.)
  • Bake for 45–50 minutes or until the top is golden brown, the bake is puffed up, and the center feels firm to the touch.
  • Let cool for at least 10 minutes before slicing and serving.
