For the dressing: place pine nuts, water, garlic, lemon juice, vinegar, olive oil, honey and sea salt into a blender. Blend until smooth; set aside.
Chop celery, apples, and onions; toss into a large bowl along with walnuts. Halve the grapes and add to bowl along with shredded lettuce. Toss together with dressing. Add an even amount to each tortilla and wrap tightly.
Serve with any extra apples, grapes, and celery on the side.
