Quinoa Wrap

  • 1 cup quinoa, uncooked
  • 4 medium spinach tortilla wrap
  • 1 cup black beans, canned
  • 1 medium avocado
  • 1/4 cup spinach
  • 1/4 cup Monterey Jack cheese, shredded
  • 1/4 cup feta cheese crumbles


  • Cook quinoa as directed on package. Drain and rinse beans; slice avocado.
  • Lay out tortillas and top each with beans, quinoa, a few slices of avocado, spinach, and cheeses. Roll up and slice in half.
  • Serve with any¬†fruit you may have on hand.
