Salad
- 4 cup lettuce, shredded
- 2 cup spinach
- 1 medium tomato, red
- 1/2 medium cucumber
- 1 cup broccoli, florets
In a medium-sized saucepan over medium heat, whisk the sauce ingredients until everything is melted and the sauce is velvety smooth; about 20 minutes.
While sauce is melting, cook pasta according to package directions and prepare side salad by chopping all veggies into smaller, bite-sized pieces.
Serve sauce immediately over warm pasta with side salad and grapes. (Serving size: 1 cup pasta, 1 1/2 cup salad, 1/2 cup grapes)
