Ingredients

  • 1 cup barley, pearled, dry
  • 4 cup water
  • 1/4 teaspoon salt
  • 1/2 cup raspberries, frozen
  • 1/4 cup almonds, sliced
  • 1/4 cup coconut flakes
  • 1/4 teaspoon cinnamon

Instructions

  • In a large saucepan, bring barley, water, and salt to a boil. Cover, reduce heat, and simmer for 20-30 minutes or until water is cooked off and barley is fluffy and moist. Remove from heat and allow to cool.
  • Stir in raspberries and allow to thaw. Add the remaining ingredients and serve immediately. Refrigerate leftovers.
