- 2 cup, cubes butternut squash
- 1 can drained chickpeas (garbanzo beans), canned
- 3 medium carrot
- 1 medium (2-1/2" dia) onion
- 1 cup lentils, raw
- 1/4 cup tomato paste, canned
- 3 tsp ginger root, fresh
- 1 fruit (2" dia) lime
- 1 tsp, whole Cumin
- 1/4 tsp salt
- 1/4 tsp turmeric, ground
- 1/4 tsp, ground black pepper, ground
- 4 cup vegetable broth
- 1/4 cup coconut flakes
- 1/2 cup cilantro
- 4 slice, medium whole wheat baguette
Cut all vegetables, rinse lentils.
Put everything in a crock pot (except cilantro). Squeeze the lime into the mixture and cook on high for 3-4 hours, or on low for 6-7 hours.
Garnish with cilantro and serve with crusty bread slices.
