Ingredients

  • 2 cup, cubes butternut squash
  • 1 can drained chickpeas (garbanzo beans), canned
  • 3 medium carrot
  • 1 medium (2-1/2" dia) onion
  • 1 cup lentils, raw
  • 1/4 cup tomato paste, canned
  • 3 tsp ginger root, fresh
  • 1 fruit (2" dia) lime
  • 1 tsp, whole Cumin
  • 1/4 tsp salt
  • 1/4 tsp turmeric, ground
  • 1/4 tsp, ground black pepper, ground
  • 4 cup vegetable broth
  • 1/4 cup coconut flakes
  • 1/2 cup cilantro
  • 4 slice, medium whole wheat baguette

Instructions

  • Cut all vegetables, rinse lentils.
  • Put everything in a crock pot (except cilantro).  Squeeze the lime into the mixture and cook on high for 3-4 hours, or on low for 6-7 hours.
  • Garnish with cilantro and serve with crusty bread slices.
