Steak Fajita Rice Bowls {Oh Sweet Basil}

  • 2 cups steak, grilled and sliced
  • 1/2 red, green and orange bell peppers
  • sliced 1/2 purple onion
  • sliced 1 to 2 ears of corn grilled and removed from the cob queso fresco cheese

For the Rice

  • 1 Cup of Brown Rice
  • 2 Cups of Water
  • 1 Tablespoon Fajita Seasoning


  • Heat a large skillet over medium heat.
  • Add the peppers and onion and a drizzle of olive oil. Cook until tender, about 8 minutes.
  • Remove from heat.
  • In a rice cooker, combine the rice, water and seasoning. Cook per product instructions or in a pan bring it to boil, add the lid and turn down to low for 20 minutes or until cooked through.
  • Warm up the steak and toss with the peppers, onion, corn and cheese.
  • Enjoy!
