  • 12 standard cupcake liners
  • 1 cup flour, whole wheat
  • 1 cup flour, all-purpose
  • 1/4 cup sugar
  • 3 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 1/4 cup olive oil
  • 1/3 cup walnuts, chopped
  • 6 medium Figs, dried, uncooked

Serve With

  • 4 medium banana


  • Preheat oven to 400 degrees. Place cupcake liners in muffin tin.
  • Mix dry ingredients and wet ingredients in two separate bowls. At this point, you will add your personalized add-ins (we used chopped walnuts and chopped figs) to the dry ingredients.
  • Add the wet ingredients to the dry ingredients. Fold together. Scoop into the muffin cups, approximately 2/3 full. Bake 15-20 minutes. Allow to cool slightly; serve warm.  Serve with bananas.
