  • Core apple and pear and cut into quarters; then cut crosswise into thin slices.  Cut celery diagonally into thin slices.  Cut cheese into julienne strips.
  • In a medium bowl, mix apple, pear, celery and cheese.
  • In a small bowl, thoroughly mix oil and apple juice.  Pour over apple mixture; toss to coat.  Sprinkle with chopped peanuts.
