Instructions
Cook the quinoa according to package instructions. Cool slightly.
Mince garlic, chop parsley and mint. Peel and chop cucumber, dice tomato, and slice green onions.
Add all of these to a large bowl along with the quinoa. Stir in remaining ingredients.
Serve with orange wedges.
