Asparagus Veggie Patties

Ingredients

  • 1 cup quinoa, uncooked
  • 1 cup vegetable broth
  • 1 cup water
  • 1/2 medium onion, red
  • 1 pound asparagus
  • 1 medium bell pepper, orange
  • 2 clove garlic
  • 1/3 cup parsley, fresh
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper, ground
  • 2 tablespoon vinegar, balsamic
  • 1/4 cup flaxseed, ground
  • 1 large egg
  • 3 slice bread, whole wheat
  • 2 tablespoon olive oil
  • 1 medium tomato, red

Serve With

  • 2 cup raspberries

Instructions

  • Rinse quinoa and then add to saucepan with broth and water. Follow instructions on package as to how long to cook quinoa. Once done, cover and set aside.
  • Meanwhile, dice onion and cut off tips of asparagus. Dice the tips and place in a mixing bowl. Dice bell pepper and mince garlic; add to asparagus with chopped parsley, salt, pepper, vinegar, flax, and egg. Chop bread slices and mix in with veggies.  Then using your hands, mix well. Shape into patties.
  • Heat a large skillet over medium and add oil. Once the oil shimmers, add patties. If more oil is needed due to sticking, add 1-2 teaspoons and swirl in pan. Cook each side for 2-3 minutes, heating through and browning both sides.
  • Dice tomato and use to top patties. Serve quinoa and berries on the side.
