Mix dry ingredients together in a large mixing bowl. In a separate bowl, mix together applesauce, milk, and vanilla; add to the dry ingredients and stir just until well blended. (More milk may be added if thinner pancakes are desired.)
Spray a skillet with cooking spray and heat over medium. Once hot, add 1/4 cup batter for each pancake. Cook for 2-3 minutes until bubbly; flip and continue to cook for 1 minute more until cooked through. Continue until all batter has been used.
Top pancakes with butter and maple syrup, and serve with sliced apples on the side.
