Instructions
Preheat oven to 400 degrees.
Cut chicken into cubes. Cut all veggies into fairly uniform pieces. Toss all into an 8X10 inch pan and drizzle with olive oil.
Season with basil, rosemary, minced garlic, salt, and pepper; toss to coat.
Pour in chicken broth and bake for 45 minutes, tossing around occasionally, being sure that potatoes have softened.
Serve with pineapple on the side, or add to the chicken and veggies right before serving.
