Ingredients

  • 1 pound chicken breast
  • 8 medium potato, red
  • 1 pound asparagus
  • 1 medium bell pepper, red
  • 1 medium bell pepper, orange
  • 1 medium bell pepper, yellow
  • 1/2 medium onion
  • 2 medium carrot
  • 1 1/2 tablespoon olive oil
  • 1/2 cup basil, fresh
  • 1 tablespoon rosemary, fresh
  • 2 clove garlic
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper, ground
  • 1/2 cup chicken broth, low-sodium
  • 2 cup, chunks pineapple

Instructions

  • Preheat oven to 400 degrees.
  • Cut chicken into cubes. Cut all veggies into fairly uniform pieces. Toss all into an 8X10 inch pan and drizzle with olive oil.
  • Season with basil, rosemary, minced garlic, salt, and pepper; toss to coat.
  • Pour in chicken broth and bake for 45 minutes, tossing around occasionally, being sure that potatoes have softened.
  • Serve with pineapple on the side, or add to the chicken and veggies right before serving.
