- 1 pound chicken breast
- 1 cup salsa
- 4 medium zucchini
- 2 cup pineapple
Toss chicken and salsa into a crockpot. Cover and cook on low for 6-8 hours.
About 45 minutes before the chicken has finished cooking, cut zucchini and pineapple into large chunks and add to the crockpot as well.
Prepare rice as directed on the package.
Serve cooked rice topped with chicken, fruit, and veggie mixture. Enjoy! (Serving size: 1/2 cup shredded chicken, 1/4 cup pineapple, 1 cup zucchini).
