Add coconut oil and honey to a glass bowl and microwave for 15 seconds.
Add 1 cup of oats to a blender or food processor and pulse to partially break down oats. Mix all oats into a large bowl with cranberries, pumpkin seeds, flaxseed, pumpkin pie spice and salt.
In a small bowl, whisk eggs. Add to oats along with pumpkin puree, honey and oil; mix well.
Drop batter by 1/4 cup onto a baking sheet; flatten a bit with the back of a spoon. Bake 15 minutes or until golden brown.
