Ingredients

  • 8 slice bread, whole wheat
  • 1/2 cup cream cheese
  • 1 medium cucumber

Serve With

  • 4 medium pear
  • 1/2 medium cauliflower
  • 1/4 cup ranch dressing, low fat

Instructions

  • Spread bread with cream cheese. Thinly slice cucumber and add to sandwich; slice in half. (If sandwich is going in a lunchbox, set cucumbers aside until lunchtime to prevent sogginess.)
  • Serve cucumber sandwiches with pears, cauliflower, and ranch dressing.
