Apple & PB with Hummus & Celery
- 4 medium apple
- 1 teaspoon lemon juice
- 1/2 cup peanut butter, all-natural
- 2 stalk celery
- 1 cup edamame, shelled
- 1 cup hummus
- 1/4 cup cranberries, dried
- 1/2 cup granola
Slice apples horizontally; spritz with lemon juice to prevent browning. Spread peanut butter between 2 slices to form apple-peanut butter sandwiches. Continue with remaining apple slices.
Cut celery into sticks. Fill lunchbox with apples, celery, edamame, hummus, cranberries and granola.
