Ingredients

  • 30 ounce black beans, canned
  • 2 cup lettuce, shredded
  • 1 medium tomato, red
  • 1 medium carrot
  • 1 medium avocado
  • 1 medium lime
  • 2 tablespoon olive oil
  • 1/2 teaspoon cumin, ground
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper, ground
  • 1/2 cup Greek yogurt, plain
  • 4 ounce tortilla chips

Serve With

  • 2 cup mango cubes, frozen

Instructions

  • Drain and rinse beans and add to a mixing bowl. Shred lettuce, chop tomato, peel and grate carrot, and dice avocado. Add to beans along with juice of lime, olive oil, cumin, garlic powder, salt and pepper. Toss well to coat evenly.
  • Split between 4 plates. Top with a dollop of yogurt and serve with tortilla chips and frozen mango on the side.
