  • Preheat oven to 375°F.
  • Add walnuts, wheat germ, and flaxseed to a baking sheet and toast in the oven for 4 minutes; set aside.
  • Add dates to a medium-sized sauce pan with water.  Cook over medium until dates are softened and most of the water has been absorbed.
  • Reduce heat to low. Add peanut butter, coconut oil, honey, vanilla, and cinnamon; stir to combine.
  • Add all remaining ingredients and toasted nut mixture to dates; stir well to coat evenly.
  • Remove from heat and press mixture into an 8X8 inch baking dish. Place in the refrigerator for at least 30 minutes, until firm enough to cut into bars. Refrigerate leftovers.
