Preheat oven to 375°F.
Add walnuts, wheat germ, and flaxseed to a baking sheet and toast in the oven for 4 minutes; set aside.
Add dates to a medium-sized sauce pan with water. Cook over medium until dates are softened and most of the water has been absorbed.
Reduce heat to low. Add peanut butter, coconut oil, honey, vanilla, and cinnamon; stir to combine.
Add all remaining ingredients and toasted nut mixture to dates; stir well to coat evenly.
Remove from heat and press mixture into an 8X8 inch baking dish. Place in the refrigerator for at least 30 minutes, until firm enough to cut into bars. Refrigerate leftovers.
