Mix chili powder, cumin, coriander, cloves, onion powder, garlic powder, salt, and oregano in a bowl. Fully coat pork with spice mixture and place in crock pot. Add bay leaf and water. Cook on low for 6-8 hours.
Shred pork, rinse and drain beans, shred lettuce, cube avocado, and chop tomato; set all aside separately.
Mix together the yogurt, lime juice, and chopped cilantro; set aside.
Add tortillas to serving area and allow everyone to assemble their own tacos.
