Ingredients

  • 4 cup spinach
  • 4 ounce mozzarella cheese
  • 1 cup cherry tomatoes
  • 4 teaspoon basil, fresh
  • 4 teaspoon vinegar, balsamic
  • 4 teaspoon olive oil
  • 4 slice bread, whole wheat
  • 1 cup hummus
  • 1 cup alfalfa sprouts
  • 2 leaf outer lettuce
  • 4 slice turkey breast, deli style

Serve With

  • 1 cup carrots, baby
  • 2 medium mango

Instructions

  • Add spinach to a large bowl along with shredded mozzarella, tomatoes, basil, vinegar, and olive oil. Toss well and set aside.
  • Layer 2 slices of bread with hummus, sprouts, lettuce, and turkey. Top with remaining 2 slices of bread and cut each sandwich in half.
  • Serve each sandwich half with salad, carrots, and mango cubes on the side.
