Slice pitas in half.
In a large mixing bowl, combine kale, oil, mustard, and 2 tablespoons of juice from lemon. Toss together and allow to rest for 10-15 minutes.
Thinly slice apples and place inside pitas.
Add the pine nuts, salt, and pepper to the kale, and toss one last time; stuff inside pitas and serve.
Serve grapes on the side.
