  • Preheat oven to 350 degrees Farenheit. Place liners into a mini muffin pan.
  • In a large mixing bowl, mix flours, baking powder, baking soda, salt, cinnamon and sugar; set aside.
  • In a blender, puree oil, milk, and spinach until smooth. Add banana and vanilla then blend again.
  • Fold the puree into the dry ingredients until combined; avoid over-mixing.
  • Pour into prepared muffin pan and bake for 15 minutes or until a toothpick inserted into one of the muffins comes out fairly clean.
