  • 4 cup lettuce, shredded
  • 2 cup spinach
  • 4 ounce colby cheese
  • 1 cup cranberries, dried
  • 1 cup sunflower seeds
  • 4 tablespoon Italian dressing, low fat
  • 4 serving crackers, whole-wheat


  • To a large bowl add the lettuce, spinach, grated cheese, dried cranberries, and sunflower seeds. Toss with Italian dressing. Serve with crackers on the side. If packing lunches, divide salad into individual containers. Toss with dressing right before eating.
