Peel cucumbers and cut each into four pieces across the width; be sure to cut the ends a little bit so that those pieces are able to stand up. Using a small melon baller, scoop out the inside while leaving a small amount on one end so the filling will not fall out. Repeat with all cucumbers.
Peel and cut carrots into small sticks.
Fill each cucumber cup with either hummus and carrot sticks or cottage cheese and bits of crackers.
