  • Peel cucumbers and cut each into four pieces across the width; be sure to cut the ends a little bit so that those pieces are able to stand up.  Using a small melon baller, scoop out the inside while leaving a small amount on one end so the filling will not fall out.  Repeat with all cucumbers.
  • Peel and cut carrots into small sticks.
  • Fill each cucumber cup with either hummus and carrot sticks or cottage cheese and bits of crackers.
