Pour water into a medium saucepan and bring to a boil.
Once boiling, add oats. Bring back to a boil, keeping a close eye to prevent boiling over. Reduce heat; cover, and simmer for 20-30 minutes or until oats have reached desired tenderness.
Dice apples. Top each serving of oats with apples, cranberries, a sprinkling of cinnamon and a drizzle of honey.
