  • 1/4 medium lime
  • 1/2 medium cucumber
  • 1 cup coconut water
  • 1 stalk celery
  • 1/2 cup pineapple


  • Peel lime, slice into quarters.  Roughly cut cucumber, reserving a few slices for garnish (peels may be removed to keep consistency smoother); place coconut water, the 1/4 lime, cucumber, celery and pineapple into a high-powered blender; mix until smooth.  Add ice if desired. Serve with a thin slice of cucumber on the rim of glass.
