Banana Nut Energy Bars

Ingredients

  • 1 medium banana
  • 1/3 cup brown sugar
  • 1/4 cup honey
  • 1 tablespoon olive oil
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup flour, all-purpose
  • 1 1/4 cup oats, dry
  • 1/4 cup pecans, chopped
  • 1/2 teaspoon salt
  • 1 none cooking spray

Instructions

  • Preheat oven to 350°F.
  • Using a mixer, beat the first 6 ingredients (banana through egg) at medium speed until blended.
  • Gradually add the flour, oats, pecans, and salt to the banana mixture, stirring until well mixed.
  • Spoon mixture into an 8-inch square baking pan coated with cooking spray.
  • Bake for 25 minutes.
  • Transfer to a wire rack to cool completely, then cut into bars.
