Mix all dry ingredients together. In a separate bowl, whisk together buttermilk, egg, oil and vanilla. Gradually add wet ingredients to dry and mix well.
Spray a non-stick skillet with cooking spray and heat over medium. Drop approximately 1/4 cup batter onto hot skillet; cook both sides until golden brown, about 2-3 minutes per side.
Serve warm with your favorite pancake toppings and banana slices on the side.
