Ingredients

  • 4 slice turkey bacon
  • 1/4 cup yogurt, plain
  • 1/4 cup mayonnaise, light
  • 1 tablespoon vinegar, cider
  • 1 tablespoon honey
  • 4 cup broccoli, florets
  • 1 cup cranberries, dried
  • 1/4 cup pecans, chopped
  • 1 ounce cheddar cheese
  • 1/4 cup sunflower seeds

Serve With

  • 1/4 cup mayonnaise, light
  • 8 slice bread, whole wheat
  • 8 slice turkey breast, deli style
  • 2 medium orange

Instructions

  • Heat a large, nonstick skillet over medium-high heat.
  • Add bacon to hot skillet and cook until crisp, flipping half-way through cooking. Allow to cool, then crumble and set aside.
  • In a bowl, whisk together yogurt, mayonnaise, vinegar, and honey.
  • Cut broccoli into bite-size pieces, then add to a large bowl.
  • Add bacon, cranberries, pecans, shredded cheese, sunflower seeds, and yogurt mixture to the broccoli; toss to combine.
  • Spread mayonnaise over bread slices and add turkey, forming 4 sandwiches. Slice in half or into quarters if desired.
  • Serve sandwiches alongside broccoli salad and orange wedges.
