Turkey and Sprout Sandwich
Servings: 4 1 sandwich
- 1/8 cup pesto
- 1/8 cup mayonnaise, light
- 8 slice bread, whole wheat
- 4 slice turkey breast, deli style
- 4 slice provolone cheese
- 4 leaf lettuce, romaine
- 1/2 cup alfalfa sprouts
- 4 medium carrot
- 2 medium pear
Spread pesto evenly over 4 bread slices and mayo over the remaining 4 slices.
Top the pesto slices of bread with turkey, cheese, lettuce, a pinch of sprouts, and then the mayo slices, forming 4 sandwiches. Cut into halves or quarters if desired.
Peel carrots and cut into sticks; slice pears into wedges.
Serve sandwiches with carrots and pears on the side.
