Orange Apricot Oatmeal

A hot breakfast packed with protein, fiber, and vitamin C. Sweetened with brown sugar and spiced with nutmeg, this recipe is both flavorful and filling.

  • 2 cup oats, dry
  • 1 cup orange juice
  • 4 medium apricot
  • 2 1/2 cup water
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 1/4 cup walnuts, chopped
  • 4 teaspoon brown sugar


  • Combine all the ingredients except brown sugar and nuts in a medium saucepan.
  • Bring to a boil.  Cover & reduce heat.  Simmer for 5 mins, stirring occasionally
  • Remove from heat, let sit for 5 minutes and then pour into bowls.  Add brown sugar and nuts to individual bowls.
