  • Place all burrito ingredients--except eggs and tortillas--into a crockpot. Stir until well mixed.
  • Cover and cook on low for 4-5 hours.
  • Before serving, whisk eggs together in a mixing bowl. Add to a large skillet sprayed with cooking spray and cook over medium heat, stirring frequently to scramble.
  • Add filling and eggs to each tortilla, then roll up tightly.
  • Add toppings as desired.
