Ingredients

  • 2 medium tomato, red
  • 1/2 medium bell pepper, red
  • 1/4 medium onion, red
  • 1/4 cup chopped parsley, fresh
  • 4 tablespoon olive oil
  • 2 teaspoon basil, dried
  • 2 tablespoon vinegar, red wine
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper, ground
  • 2 cup White Kidney Beans
  • 12 leaf outer lettuce

  • Chop tomato, bell pepper, red onion, and parsley.
  • Carefully mix all ingredients except lettuce in a glass or plastic bowl.
  • Cover and refrigerate at least 2 hours to blend flavors.
  • Serve on lettuce with baked tortilla chips.
