Wash and chop all veggies. Place all in medium bowl. In a separate bowl, mix oil, oregano, basil, parsley, salt and pepper, and whisk together. Squeeze 1/2 of the lemons juice into mixture and whisk again. Gently toss dressing and feta cheese into veggie mixture. Set aside.
Toast bread slices 1-2 at a time. Once toasted place slice of turkey on bread, then top with approximately 1/4 cup mixture onto each slice, serve open faced, 2 slices per serving. Serve orange wedges atop salad greens and fresh parsley. Use personal choice of dressing.
