Tomato Quinoa Salad
- 1 cup quinoa, uncooked
- 2 cup grape tomatoes
- 2 medium apple
- 1 medium avocado
- 1/4 cup Italian dressing, low fat
- 4 medium kiwi
- 4 medium plum
Cook quinoa according to package directions, then set aside to cool.
Meanwhile, dice tomatoes, apples, and avocado. Add all to cooled quinoa, then toss together with dressing.
Serve with plums and kiwi on the side.
