Chop green pepper, red Pepper, onion and carrot. Place carrots aside for later use. Heat a large-sized skillet on medium heat, and add 1 tablespoon of olive oil. Add peppers, onion. Saute for approximately 3 minutes while stirring.
Add in your lean ground beef and allow to cook until no longer pink. After beef has browned turn heat to low. Combine the remaining ingredients into the cook beef. Let it simmer on low heat for 10-15 minutes. Serve on whole wheat buns and serve with a side tossed salad of shredded lettuce, chopped tomatoes and grated carrots.
