Fall Fruit French Toast
Fall Fruit French Toast is topped with caramelized apples and blueberries for a low sugar breakfast that tastes like a treat!
- 4 large egg
- 1 cup milk
- 2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 8 slice french bread
- 4 tablespoon butter, unsalted
- 1/2 cup honey
- 1 large apple diced
- 1 cup blueberries
- 1/4 cup dried cranberries
Whisk eggs, milk, vanilla and 1/4 teaspoon cinnamon in medium bowl.
Heat large skillet over medium heat. Spray with cooking spray. Dip one slice of bread at a time into the egg mixture. Cook each slice of bread until golden, 2-3 minutes per side.
Melt butter in a skillet. Once melted, pour honey into the skillet and stir to combine.
Add diced apples to the skillet. Let apples cook for 5-7 minutes until they are brown and caramelized on one side. Gently turn the apples over and cook for another 10 minutes. As they cook, their juices will combine with the honey to create a delicious sauce and prevent the honey from burning. Add the blueberries and dried cranberries during the last 5 minutes of cooking.
Serve warm fruit sauce over french toast. Enjoy!
