Quarter the 1/2 onion, slice the garlic in half then combine the ingredients, except tomatoes in a food processor by pulsing until evenly chopped. Add tomatoes and pulse until chopped.
Serve immediately with whole grain tortillas (whole grain crackers are great too!) or simply eat from a small bowl with a spoon! -its that good!!
