Place all pancake ingredients (oats through honey) into a blender, and mix until thoroughly blended. Then, add one banana and blend again until smooth.
Chop nuts, set aside.
Spray a large skillet or griddle with cooking spray and heat over medium.
Pour batter by 1/4-cupfuls onto the hot griddle; sprinkle a small amount of nuts over the top of each pancake.
Once pancakes are bubbly, flip and continue to cook until golden brown. Repeat until all batter has been used.
Serve topped with slices of the remaining banana and maple syrup.
