Ingredients

  • 1 stalk celery
  • 2 tablespoon Cashews
  • 1/4 cup, halves Dried Apricots
  • 1 stalk green onion
  • 4 tablespoon mayonnaise, light
  • 1/2 cup yogurt, plain, low-fat
  • 1/4 teaspoon salt
  • 1/4 tablespoon black pepper, ground
  • 8 slice bread, whole wheat
  • 4 serving turkey breast, deli style
  • 2 cup shredded lettuce

Serve With

  • 4 medium pear

Instructions

  • Thinly slice celery; chop cashews, apricots and green onions. Mix these ingredients with mayonnaise, yogurt, salt and pepper. Spread onto toasted bread, layer with a serving of sliced turkey and lettuce, top with second slice of bread. Serve with pears.
