Instructions
Scoop out the flesh and mash an avocado. Grate 2 of the carrots.
Toast bread, spread avocado on each slice of bread. Layer each sandwich with cheese, lettuce, sliced tomatoes and grated carrots. Serve with extra carrots and sliced apples.
