Preheat oven to 325 degrees. Mix oats, brown sugar, wheat flour, baking soda, baking powder, cinnamon and salt. In a small microwaveable bowl, melt together the honey and vanilla (just long enough for the honey to soften and easily incorporate into the dry ingredients).
Stir honey into the dry ingredients and mix well. You may need to use your hands to get it to mix. Add walnuts and cranberries and mix again. Press into a greased 8x8 pan. Dough will be very dry and crumbly, but press firmly until dough forms with pan.
Bake at 325 for 20 minutes or until edges are browned. Take out and let cool completely.
Cut into strips and store in snack size bags.
