  • Preheat oven to 325 degrees.  Mix oats, brown sugar, wheat flour, baking soda, baking powder, cinnamon and salt.  In a small microwaveable bowl, melt together the honey and vanilla (just long enough for the honey to soften and easily incorporate into the dry ingredients).
  • Stir honey into the dry ingredients and mix well. You may need to use your hands to get it to mix.  Add walnuts and cranberries and mix again.  Press into a greased 8x8 pan. Dough will be very dry and crumbly, but press firmly until dough forms with pan.
  • Bake at 325 for 20 minutes or until edges are browned. Take out and let cool completely.
  • Cut into strips and store in snack size bags.
